5-Ingredient Spicy Noods

I set out to make a simple, delicious dinner with all ingredients sourced from 168 Asian Market in Reno, Nevada. Here's what I came up with!

Is there anything better than a 5-ingredient, healthy-ish dinner that you can make in 20 minutes? That's what I came up with in this recipe. Depending on the type of gochujang you have, this can range from spicy to, like...really really spicy. So taste as you go! I hope you enjoy it as much as I do.


5-Ingredient Spicy Noods


Ingredients

  • 3 tbsp unsalted butter

  • ½ cup of kimchi, chopped into small pieces

  • 3 tbsp gochujang (unless it's super spicy, then 1-2 tbsps)

  • 2 tbsp chili crisp (bonus if it's the kind with peanuts in it)

  • 2 bricks of frozen udon noodles

  • Optional: sliced scallions and sesame seeds, for garnish

Directions


  1. Bring water to boil in a medium pot.

  2. While water boils, place a skillet over medium heat.

  3. Add butter to pan and swirl it around to coat the bottom.

  4. Add chopped kimchi and gently saute under it is warmed through.

  5. Add gochujang and chili crisp and toss to coat the kimchi.

  6. Place udon noodles in boiling water and turn off the heat.

  7. Stir udon to ensure it is thawing but not overcooking.

  8. Take ½ cup of the udon noodle water and add it to kimchi mixture. Stir to combine and make a nice sauce.

  9. With tongs, remove the udon noodles from the pot, shaking off any excess liquid, and dropping them into the skillet.

  10. Toss noodles to coat in sauce.

  11. Place in bowl and top with scallions and sesame seeds. Serve immediately.
